A truly scrumptious Pork Roast, with delicious crackling, in various sizes, 2, 4 or 6 cutlet sized racks. Simply seal the ends in a hot pan, move to an oven tray with a trivet, or a sliced apple to lift it off the base, and roast first for 20 minutes on hot (200degC), then reduce the temperature to 180degC for another 40 to 60 minutes until done. Great with apple sauce.
