A 1.5kg Pork Leg Roast, taken from young, chemical and hormone free NSW pigs, which have been raised in enviro-shelters. Being young, the leg is not overly fatty, and comes with the skin on for good crackling. To cook, simply pat dry the skin, then oil and cover in salt, place in a hot oven for first 20 minutes, then reduce the heat to about 130deg C and cook for a further two hours, or even more at a lower heat.
