Marinated Kangaroo Rump with Game Sauce

INGREDIENTS: (for 4 people). 1 pack of Kangaroo Rump from the shop
For The Marinade: 1 chopped onion, one finely chopped carrot, big cup of red wine, half a cup of olive oil, a few crushed bay leaves, 8 x crushed juniper berries (not essential ), 2 x chopped garlic cloves, mixed herbs, salt, pepper.
Thick Cream, Port or Sweet Red / White Wine

METHOD: puncture holes in the rump to allow marinade in..cover with marinade, put tin foil over the top, punch holes in the tin foil, leave to soak out of the fridge for at least 8 hours...or in the fridge for at least 12 hours....

MAKE THE GAME SAUCE: After marinading, put all the marinade ingredients in a pan and bring to the boil, cooking slowly for about fifteen minutes , skimming off any scum from meat residue. Remove from the heat, sieve the liquid out, return liquid to the pan with ideally a small glass of port...warm through for a few minutes with the port, check for seasoning and when done, add a couple of tablespoons of fairly thick cream, mix it all in and warm it through, remove from heat and return back just before serving.

FOR THE KANGAROO: Once marinated, remove, pat dry, and cook in the oven (hot) for 15 minutes, or on the BBQ as you would for Rump Steak, or in the frying pan. Careful not to overcook it as there is no fat and it will dry out.

SERVING: Slice the Kangaroo steak into desired portions, poor over the sauce and enjoy with red wine ( Shiraz, Cab/Sav, or even Pinot Noir ). Serve with salad...mashed potatoes.

A NOTE ON KANGAROO:  Sadly for many Australians, Kangaroo meat is regarded as unclean meat, almost as if it were vermin. However, it is very carefully farmed and controlled, and the meat has an excellent gamey flavour ( better than the local venison ), is extremely tender and one of THE HEALTHIEST MEATS YOU COULD POSSIBLY EAT...low in fat, high in essential vitamains and proteins, low in cholesterol....as good as meat gets from a health perspective. In other countries Kangaroo is a premium meat, valued for its Health Benefits....

A NOTE ON THE MARINADE: this marinade works well on any game and also on tough steak that you wish to tenderise. You don't have to make a sauce from it, as it works on its own as a marinade.
