Serrano Ham Croquettes, or Fritters

Recipe for Four People:

Ingredients: 100gr butter, 100gr flour, 200gr, diced Serrano ham, one finely chopped small onion, one finely chopped garlic clove, 1litre milk, chopped parsely. For the batter: flour, egg and breadcrumbs.

METHOD: Melt the butter in a pan, add onion and garlic and softly fry for a minute or so. Add chopped Serrano and warm through. Add flour and mix through until stiffened. Slowly add milk a bit at a time and gently cook through for around 10 to 15 minutes, mixing and turning with a wooden spoon all the time, taking care not to burn the flour. Grease a bowl and transfer the cooked mixture to it, sprinkle in the parsley and put bowl in fridge to cool down for an hour or so. Once cool, take big dollops out and mould to the shape you want with your hands. Take each piece and flour it, dip it in egg, roll it in breadcrumbs and then fry in oil until golden brown, taking about two minutes per side. Serve straight away. Easy for last minute as you can do all the hard work well in advance.
