Hungarian Beef Goulash AN ABSOLUTE CLASSIC

10 mins prep and 3 hours slow cooking, recipe feeds 4 people :-

INGREDIENTS:-  600g diced beef, 1 big onion finely sliced, 1 stalk celery finely chopped, 2 carrots diced, 2 cloves chopped garlic, 1 red capsicum, chopped,  2 big tablespoons spoons of tomato puree, 1 can of diced tomatoes, 500ml beef stock, 2 bayleaves, 1 tablespoon Sweet Paprika, salt pepper. A tub of sour cream. Parsely garnish.

METHOD:- flour, and brown beef in a little oil. Transfer to oven dish. Fry onion, bay leaves, garlic and other veggies for a few minutes to soften. Add paprika, tomato puree, canned tomatoes, beef stock. Bring to the boil and season. Add to the diced beef, cover and cook in slow (130 to 140degC) oven for 2 1/2 hours.
Remove from oven, and if there is too much liquid, then ladle it out into a pan and boil it down, then put it back into the dish. Add sour cream to each portion and serve, sprinkled with Parsely. 

OPTIONS:- Add a little red wine. Or use the smokey paprika instead. Use diced pork. Add other veggies such as green capsicums, a parsnip and big chunks of potato...

SERVE WITH: mashed potatoes, noodles, dumplings or gnocci even.
