Marinated Quail with a Pasta Salad


INGREDIENTS:                                                                                                                                   SERVES: 2-3 depending on your appetite!
6 pack of Marinated Quail (already butterflied and marinated in the shop at Brookvale)
3 ripe Tomatoes - cut thickly into slices
1 bunch Shallots - ends trimmed
3 Zucchini - cut into thin strips lengthways
4 tblsps Olive Oil
1 tblsp Balsamic Vinegar
1 tsp Dijon Mustard
Salt and Pepper
1 handful Basil Leaves
Your favourite Pasta

PREP TIME:  15 mins     COOK TIME:  10 mins + 5 mins resting

While the barbie heats up, throw your favourite pasta into a pan of boiling salted water and cook according to the instructions on the packet, or to your taste.  Drain and sprinkle with 1 tblsp of the olive oil, to prevent it sticking together.
Put the quail on the barbie, rib side down for 8-10 minutes, then turn over for 3-4 minutes.  While these are grilling, rub the scallions and zucchini with a drop of oil and grill alongside the quail until gently charred and softened, about 4-5 minutes.  When the quail are ready, let them rest for 5 minutes in a warm place while you assemble the pasta salad.
Whisk together the remaining olive oil, balsamic vinegar and mustard with a pinch each of salt and pepper and pour over the tomatoes.  When the zucchini and scallions are ready, mix them gently with the drained pasta and add the prepared tomatoes and the basil leaves, roughly torn.

OPTIONS:  You could make a rice salad, instead of using pasta - the tomatoes, scallions and zucchini would be great with that too.

SERVE WITH:  Plenty of paper towels - as fingers are the only way to eat quail!

DRINK WITH:  A good Chardonnay - something with plenty of flavour to go with the char-grilled flavours
