With Lentils              With Red Wine

ABOVE ARE TWO CLASSIC WAYS TO COOK LAMB SHANKS

The image to the left is the French way, cooked with lots of lentils, probably around a can and a half for four lamb shanks, a little red wine, a can of tomatoes, finely chopped onion, garlic, celery and plenty of stock.

The image to the right is similar to the lentils method, only you use nearly a whole bottle of red wine, and the veggies are kept in much larger chunks. The liquid is reduced on its own after cooking the lamb shanks.

Asian Lamb Shanks      Cut into Rounds and 
                                Made into an Indian Curry


Another two GREAT WAYS to cook Lamb Shanks is FIRSTLY with Asian Spices, such as Ginger or Galangal, Lemon Grass, Fish Sauce, Brown Sugar, lots of Lime Juice, and a big can of Coconut Milk or Cream, dressed with Coriander,

and SECONDLY, get your butcher to cut the shanks into rounds and make an Indian Style Curry with them. You would need ginger, garlic, lentils or chick peas, cumin powder, coriander powder, cinnamon, cardamon, stock and lots of chopped onion.
