Chicken Satay W/ Peanut Sauce

Chicken Satay with Peanut Sauce
Despite the lengthy ingredients list this is an easy dish to make and is not technically challenging. It is very tasty though, and well worth doing.
Preparation Time
: 20mins, plus minimum 30 minutes marinade time.
Cooking Time: 5mins.

For the Chicken Satay Sticks:-
6 to 8 Chicken Thigh Fillets, cut into small, 2cm inch squares (need to be small), 24 to 36 small skewers, soaked in water.

For the Marinade
1 stem of Lemon Grass, Juice of 1 Lime, 1 small Onion, 1 red Chilli, 1 inch cube of fresh Ginger, 1/2 tsps of dried Turmeric, 2 tbsps of ground Coriander, 2 tsps ground Cumin, 3 tbsps of Dark Soy Sauce, 4 tbsbs Fish Sauce, 4 tbsps Brown Sugar, 2 tbsps of Vegetable Oil.

For the Peanut Dipping Sauce:
1 cup of Dry Roasted Peanuts, 1 Garlic Clove, 2 tbsps Dark Soy Sauce, 4 tbsps Brown Sugar, 1 tbsp of Tomato Paste, 2 tbsps of Fish Sauce, 3 tbsps Dark Soy Sauce, juice of 1 Lime, 1/2 cup of Coconut Milk.

FOR THE Chicken Marinade

 Put all the Marinade ingredients in a blender and blitz to form a runny paste. Add a little water if not runny enough. Mix this paste with the chicken cubes and leave covered out of the fridge for a minimum 30 minutes, preferably 60. Then thread the skewers with the marinated chicken bits, and cook over a hot BBQ for about 2 to 3 minutes a side, no more.
A lazy way to do the sauce is to use the marinade and simply add the peanuts, coconut milk, and blitz again in the blender. To avoid possible chicken cross contamination you should cook the marinade before eating it if you intend to turn it into the dipping sauce. You need only heat it up in a pan for a few minutes before cooling.

1/  Put all the ingredients in a blender and blitz to form a paste. It should not be too runny, so add more tomato paste and peanuts to achieve the right consistency. This sauce may be either hot or cold.

2/  If you don't have all the ingredients for the dipping sauce then you can make a perfectly tasty and plausible sauce using 2 tbsps of Peanut Butter, one tbsp of Tomato Paste, 2 tbsps of Sweet Chilli Sauce, 1 tbsps of Fish Sauce, some lemon juice, and 1 tbsps of Soy Sauce, all mixed together in the blender.

These are very Moreish indeed so make sure you cook plenty of them. The sauce will keep for ages in a jar in the fridge.
