Spicy Chorizo & Scallop Skewers


I put on my take of these delicious skewers at a BBQ last weekend, and they went down a storm. Dead easy to make, extra quick to cook and seriously yummy.
For about 18 skewers, buy half a kg of small Scallops (available these days from most Seafood places at around $40.00/kg), you can buy Roe on or off, (personally I like the Roe on for extra colour and texture), and then a couple of HOT Chorizo from the shop. Slice the Chorizo into rounds and cut the rounds in half.
Pop a couple of scallops on the skewer, followed by a lump of Chorizo, then repeat this and they are made !

Cook on a very hot BBQ plate for 1 to 2 minutes a side ( DO NOT OVERCOOK), season and serve immediately.
The sweetness of the scallops contrasts beautifully with the savoury and slightly spicy 
Chorizo...and at a cost of only $2 per skewer.
