Cheaper Cuts

The cheaper cuts are very often THE BEST cuts, only we seem to have forgotten how to use them, and the world is now so busy that we seem to not have time for them. But they could not be simpler really, and all stews and casseroles will keep for days on the hob and will actually improve with age. This cannot be said for left over steak...whose only use to me seems to be for Thai Beef Salad.
